Diet Recipe for City Chicken

This diet recipe is not only low in fat and calories - it's fun to make and eat!  Furthermore, one not need to live in the city to enjoy this tasty, diet recipe.

City Chicken can be prepared inside the kitchen oven using metal skewers, but it's more fun when it's cooked outdoors.

Ingredients for Diet City Chicken:

- 6 chicken tenders - raw but thawed

- salt & pepper

- 1 cup of white vinegar

- 2 Tablespoons of apricot jelly or preserves

- wooden skewers

- 1 small can of unsweetened pineapple chunks, drained but keep the juice!

 

- 1 bell pepper

- 1 onion

How to Prepare Diet City Chicken:

  • Cut tenders into chunks that will be big enough to fit on the wooden skewers.
  • Soak tenders in 1 cup of vinegar plus 2 cups of cold water in the fridge for about an hour.
  • Remove chicken from the fridge and drain.  Place chicken into a bowl. Reserve 1 Tablespoon of the pineapple juice, and add the rest to the chicken.
  • Add salt and a bit of pepper to suit personal taste.
  • Thread chicken onto wooden cooking skewers alternating with pineapple chunks, strips of onion and strips of the bell pepper.
  • Place onto a medium-hot grill and cook until chicken is done through and through.  
  • Mix the apricot preserves with 1 Tablespoon of reserved pineapple juice.  Brush onto the City Chicken sticks and cook until candied.
  • Serve on a bed of white rice with a bit of duck sauce on the side.  A fortune cookie or two for dessert adds a creative touch - and will also add a festive touch to the City Chicken.
  • Recipe contains about 75-100 calories per skewer, depending upon the size of the chicken tender and the brand of preserves used for recipe.
