Low Fat Recipe for Diet Vegetable Cakes

Over the years, one of the chief complaints that I have heard among dieters is the utter dislike for vegetables. A common question is, 'Do you have a recipe for people who don't like vegetables?"  You bet!   

Ingredients for Diet Vegetables Cakes:

- 2 cups of shredded vegetables (carrots, mushrooms, squash and potatoes make a great mix)

 

- 1/2 cup of finely crushed bread crumbs
- 1 egg OR 1/4 carton of egg substitute
- salt and pepper to suit personal preference
- no calorie, non-stick cooking spray - butter flavored

Mix all the above ingredients except the cooking spray. Coat a non-stick pan very well with the cooking spray, then form vegetable mix into small cakes or patties and carefully place into pan.

Allow vegetable cakes to turn golden brown on one side, then carefully turn and cook until golden brown on the opposite side.

Remove and enjoy with a light ranch dressing OR a light jam for dipping.

Vegetables are ultra low in calories and are necessary in providing a nutritious diet.  They also help fight against cancer, heart disease as well as a myriad of other diseases.

Our recipe for Diet Vegetable Cakes contains about 150-200 calories for the entire recipe - depending upon the types of vegetables used. All varieties of potatoes, corn, black-eyed peas and beans tend to be higher in calories than most other vegetables.
